Smore’s Cookies

  • 1 cup salted butter (browned)
  • 1 and 1/4 cup brown sugar
  • 1/3 cup sugar
  • 2 egg yolks and 1 whole egg
  • 1 tablespoon vanilla
  • 2 cups flour
  • 3/4 tsp baking soda
  • 1 cup milk chocolate chips
  • honey cinnamon graham crackers
  • marshmallows

Directions

  1. First we are going to start off by browning your butter. You will cook the butter over medium heat until your butter foams and starts to brown. We will then take it off the heat and let it cook to room temperature.
  2. In a separate bowl combine the flour, baking soda, and 1 tsp salt if you opt to use unsalted butter. Whisk these ingredients together.
  3. In the bowl with your brown butter combine the brown sugar, sugar, vanilla, and eggs. Whisk these ingredients together until combined.
  4. We are now going to slowly fold in our dry ingredients into our wet ingredients. I normally do this in thirds. Once the dry ingredients are folded in we will then add the milk chocolate chips. I normally will fold in 1/2 cup at a time.
  5. You will now assemble the cookie. Take half a graham cracker and place the marshmallow on top. Grab a spoon size ball of cookie dough and mold it over the marshmallow and the graham cracker.
  6. Repeat for all cookies and bake at 350 degrees Fahrenheit for 11 minutes. Enjoy!
